Stoke Newington’s Meat butchers starred on Simon Mayo’s Greatest Hits Radio show this week.
Armed with a copy of local butcher Paul Grout’s cookbook, food writer and presenter Nigel Barden cooked up one of his recipes; Chicken Marbella.
The book shares Paul’s insights into what makes good meat, which cuts to buy and how to cook them well.
Paul Grout started out as a chef and now runs three state-of-the-art butchers in London.
The recipe features chicken from Sutton Hoo (slow grown, high welfare and super tasty) and wine from Alliance Wine.
